Apart from the morning fresh ecological vegetables on offer on the ecological vegetable stall on today´s Friday market in Calasparra there is a limited supply of wild asparagus picked fresh from the mountains around the town.
Wild asparagus is particularly delicious in a Spanish or French omelet. It has a slightly stronger flavour than garden asparagus and only the tender tips are used in cooking.
