THE BAR EQUINICA AT MADRID FUSION SHOW

Local chefs, Cristofer Corbalán and Carla Mossciaro, of the Bar La Esquinica presented a «Show Cooking» at the Madrid Fusion Show.
Forming part of the menu was a mellow rice dish with boned pork ribs, beans from the Segura river area, spring garlic, dried peppers and tomatoes, and crowned with an «alioli» with black garlic.
They also presented one of their most emblematic dishes of roast egg with bechamel sauce of black truffles and Murcian bacon.
