WHITE BEANS WITH HAM AND SPINACH

You will need:

½ k white beans –  alubias blanca
• ½ k spìnach –  espinacas
• Ham bone – trozo de hueso de jamón
• 150g ham –  jamón serrano
• ½ onion – cebolla
• 1 carrot – zanahoria
• 3 cloves garlic
• water – agua
• olive oil – aceite virgen extra
• salt – sal
• 1 pinch cumin –  comino
• 1 bay leaf – hoja de laurel

Method

Put the beans into soak overnight.

Put the beans, the ham bone, onion, garlic, carrot, a pinch of salt, a pinch of cumin and a bay leaf in a saucepan and cover with water. Use a pressure cooker for 10 minutes or allow to cook slowly until the beans are tender (30 mins to an hour).

Remove the hambone and the bay leaf. Put the onion, carrot, garlic, a handful of beans and a little stock into a mixer and process until you have a puree. Add the puree to the rest of the beans.

Cut the ham into fingers, fry them briefly and then add to the beans.

Clean the spinach and chop finely. Fry in the same oil as the ham and add to the beans. Mix and serve.
